What are the best things to make when it is too hot to bake? I think the best desserts are no-bake desserts! When you let them chill in the freezer, they become ice-cold. Then, they are the most refreshing and delightful desserts to cool down with.
Plus, you don’t have to heat up the house by using the oven – bonus!
These little coconut clusters taste a lot like Mounds! If your sweet tooth roars and you start craving candy, make these. They only take about 20 minutes of prep or active time – then a bit of time to chill. After they set, you are free to enjoy.
Coconut Bites Keto
One of my favorite things about these delicious keto coconut bites is that there are only 3 grams net carbs in each cluster/bite/candy. Whatever you call them, I call them yummy.
If you have kids, I suggest making a double batch. When they see you’re making them, they are going to ask for a bite (or 5). I love sharing them with my kids. Since they are sugar-free, I don’t feel like I’m wrecking their blood sugar or creating a sugar addiction.
Plus, these coconut bites are so high in healthy fats that just one or two of them will fill your kids up.
Is Desiccated Coconut Keto-Friendly
Yes, desiccated or shredded coconut flakes are keto-friendly. In fact, there are just 0.6 grams net carbs in 1 serving of shredded coconut. It’s a wonderful source of healthy fat and fiber too.
I’ve used it as an ingredient in keto coconut shrimp and keto key lime pie fat bombs. I love the contrasting texture they offer whenever I use them in recipes.
Easy Coconut Dessert No-Bake
Definitely store these no-bake coconut clusters in the refrigerator or freezer. If you keep them at room temperature too long, they might melt. They will stay fresh for about 4 days in the refrigerator or 6 months in the freezer.
Always store them in an airtight container. Keeping the air off of them will help them stay fresh and delicious longer.
Best Sugar-Free Chocolate Chips
I used Lily’s chocolate chips. They are my favorite brand of sugar-free chocolate chips because I think they have no aftertaste. They just taste like chocolate!
You can also use Enjoy Life or Bake Believe sugar-free chocolate chips.

Ingredients:
Lily’s semi-sweet baking chips
Unsweetened coconut flakes
Toasted unsweetened coconut flakes
Coconut oil
Instructions:
Combine the coconut oil and baking chips in a microwave safe bowl, and heat for 30 seconds at a time until the chips are completely melted and smooth.
Add the regular and the toasted coconut flakes to the bowl with the melted chocolate and stir to combine well.
Use a cookie scoop or small spoon to scoop out 12 portions of the coconut mixture onto a parchment lined baking sheet.
Chill in the fridge until the coconut clusters have hardened.
