This chicken soup recipe is easy to make, and despite being low-carb, it’s still hearty enough to fill you up.

How to Make this Low-Carb Soup Recipe
- Boil chicken breasts and cut into cubes.
- In a large pot, melt butter over medium heat and add chopped onion, carrots, celery, and fresh garlic.
- Add the cubed chicken, chicken broth or chicken stock, ginger puree, and lemon juice.
- Add one bay leaf.
- Bring to a boil, reduce to low heat, and simmer for 20 minutes.
- Serve hot, and enjoy!

Try changing it up with these tips:
- We boiled our chicken first for this recipe. You can bake it, pick up a rotisserie chicken at your local grocery store, or use leftover chicken.
- You can also use shredded chicken instead of cubes. I have made it both ways, and we prefer cubing it; I think it’s because it’s what I grew up with.
- Don’t like using fresh garlic, use a tablespoon of minced garlic instead.
- No time to stay in the kitchen. Pull out the slow cooker and throw in the ingredients for an easy dinner recipe.

Ingredients
- 4 Boneless Chicken Breasts
- 10 cups Chicken Broth
- 1 Large Onion diced
- 4 Medium Carrots peeled and sliced
- 4 Stalks Celery sliced
- 4 Cloves Garlic pressed
- 1 tsp Ginger Paste
- 1 tsp Lemon Juice
- 1 Bay Leaf
- Salt & Pepper to taste
Instructions
Use your dutch oven to boil the chicken breasts for 20 minutes, remove water and chicken and chop into bitesize pieces
Use the same pot, melt butter and add onion, celery, carrots, and garlic. Cook for 10 minutes.
Add the chicken, chicken broth, ginger, lemon juice, and bay leaf.
Heat the soup until it reaches boiling point. Once it starts boiling, reduce the heat to a low setting and let it simmer for 20 minutes.
Remove the bay leaf, add salt and pepper to taste.
Serve hot and enjoy!
